Hmm... I've used deftness vs. quickness for things like that before, but that isn't quite right now that I think about it. Opposed quickness sounds good. Perhaps a straight deftness test if would be hard to snatch the object even if you could grasp it unhindered (wouldn't happen often, I guess).
