Actually, the story I got from my Great Granny was "cow peas" (black-eyed
peas and other varieties were livestock feed long before people started
eating them)  and collard (turnip, lambs quarter, cabbage, etc) greens were
the main everyday fair for the poor folk and if you could afford the "sow
belly" to put the meat in the meal you were pretty well off.  The theory was
if you could eat this "high on the hog" on New Years day, you would never
have less to eat the rest of the year.
