Just to clarify.  Your Dodge skill is used against missile attacks.  When
you vamoose in combat, you make the appropriate fightin roll..

No.  One attack, one Dodge/Vamoose...

I would think the opposite.  If many people are shootin, there are more
bullets/knives in space.  Dodging on may get you hit by another.  In combat
if you are avoiding a blow to the head, you may be moving your head into the
path of another weapon...
