Hey Joe!  

I'm pretty flexible about allowing the Blessed/Huckster/Shaman in the
Apocalypse.  If a PC wants it, great.  Let them.  

I would say the Blessed is easily adapted.  the templars are cool, but
they do not represent any God persay, but rather the conviction of the old
orders.  

The Hucksters are a bit different.  I would say why not make the mechanics
the same (since they exist and are very clever) but make the medium
something a bit different.  Maybe there is a reason all these gamers
collect Magic and Doomtown CCGs!  That would be hilarious to have a
suitcase kid throwing around Magic cards to work some magic.  Maybe for a
change make the card burn themselves up and thus new ones must be found...

As per Shamans this is the biggest difficulty.  The white man pretty much
conquered the land and thus the spirits were mostly driven out.  I would
allow a shaman but would require either the finding of a natural zone
where the spirits may be or necessitate more Appeasement!  A spin off of
the Shaman may be one who makes one shot fetishes that bind (or call) the
spirits to come to the aid of the character- one shot only!
