[BNW] Stealth Question

I have a Sneak in my group, and he posed the following question:

"If I successfully 'Stealth' up to an opponent (they have failed their
Perception roll against my Stealth), what bonus do I get if I attack him
from behind, unawares?  What about an attack just from behind (opponent is
combat ready, but unaware the Sneak is behind him)?"

On a side note, does anyone else feel I'm justified in cringing at the
thought of a player choosing the Goliath template?? Wow. Very, very powerful.
