Its cool, its different, its neat...but there are a several of reasons not to use the enemy's weapons:

a. booby traps
b. being mistaken for enemy troops (either from the air in the case of tanks or from the sound/sillotte in the case of the side arms/MGs)
c. breakdowns and repair parts.  You'll have to scrounge.
d. operational differences (does this tank use gas or diesel...or I wonder what this button does)

That being said, for short term infiltration and behind enemy line missions, they are probably the way to go.  Just don't dress up like the enemy or you'll get shot as a spy.
