In defense of the shelters and rescue groups who advise against or refuse offers for adoption. Perhaps they know and or understand part of the dogs history that you are not aware of. And are protecting both the dog and the potential adopter.
Think for example if a full grown 135 lb GSD is used to sleeping on the bed and the new owner does not wish that to happen. If the new owner is not well versed in training dogs, or working with GSD then sooner or later the dog will be returned to the kennel/rescue/shelter. It will be easier on the dog (and that is what rescue is about... not the people) to find a home that accepts the animals quirks. A family that is used to "house pets", "indoor animals", and dogs on their bed would be a better match.
Just some thoughts from the other side.
