The answer is yes, dogs can take ginger root. Here's a remedy from New 
Choices in Natural Healing for Dogs and Cats, by Amy D. Shojai:

Add one tablespoon of fresh sliced ginger to a cup of hot filtered water 
and let cool. Strain the tea and give pets under 15 pounds 1/2 to 1 
teaspoon of the tea, using a dropper or needleless syringe. Give 1 teaspoon 
to 1 tablespoon to pets weighing 15 to 50 pounds, and 1 to 3 tablespoons to 
larger dogs.

Here's another suggestion, from the section on car sickness: Use capsules 
that are sold in health food stores. Dogs 15 pounds and over can take 500 
milligrams of ginger (Zingiber officinale), while smaller pets can take 
half that amount or less. The easiest way to give the ginger is to open a 
capsule and sprinkle the contents on a tablespoon of baby food. Give it 
about 20 minutes before going on a drive.
