I'd have been just as baffled, never having bred a bitch myself. Your girl
is lucky she found you. Once she really settles in, comes to know that
you're now hers for keeps, she'll grow in her coat and be just fine. The
cowering is hard to totally overcome, if she's been abused or badly
spooked in the past, but it should get less and less with time, especially
when she's just with you and the folks she's come to trust.
