Just for conversation's sake, saying that breeders
know what they are doing and have done homework is
like saying all parents with human children have done
theirs.  NOT!!!  Some have the best of intentions but
leave much to be desired, none the less.  I can;t
tell you how many dogs over the last 17 years I have
worked rescues with from breeders who meant well. 
That is across the board as we did rescue for several
types of large breeds LGD-Herding and Hounds. It is
true about large breeds and bone problems occurring
with over feeding proteins. IMO Faster and bigger is
not always better.  I could come up with some Web
resources if anyone would like to read up on CHD and
ED.
