Yes it does.

I think personally that while using | and _ symbols
makes some logical sense, I find it confusing as I
expect line-like symbols to be structural and not part
of a move.

One thing you learn in this process is the variability of human perception.

I use Paul Wamelen's server for Conhex and
so the issue doesn't arise (it's all in color).

I do like that server, but for ConHex I find the board very clear in ASCII. I would like that sort of interface for Quoridor. It's easy to read the Quoridor board in ASCII, but I find it easy to screw up the moves. (Not that I am blaming the interface for my dismal showing in the tournament. I blame my brain for that.)

What would it look like if you kept v, h but did
remove wall boundaries?

Well, that works, but I liked the "-" and "|" version a lot better.
