I believe Ghostdancers introduced optional grit rules for more than 5.
Generally 5 grit is the maximum that will aid you in becoming harrowed and
on guts checks unless you are using optional injun rules.
Some of your characters could easily have more grit than others and when the
devil's beeves comes after the first one and the surviving witnesses can
certainly earn another point of grit.
In 2nd edition Shane changed the text on the Los Diablos so that they don't
automatically come after 5 grit. As the marshal you decide when they arrive.
This is to keep it fresh so your players don't go beeve crazy when they get
5 grit.

A bit of confusion probably caused by half my books being 1st printing and
half being 2nd. Is 5 really the maximum Grit you can have? I was
re-reading Ghost Dancers, and it talks about the Ghost Dance giving people
up to 10 Grit. Not sure how that's possible, though, if the max you can
have according to the Marshall's Book is 5. Even worse, that book talks
about Los Diablos, saying they go after Heroes who have 5 Grit already; but
their coup is AV 1 and Grit 1. Now if they're going after people who
already have the maximum possible grit, why would they give out more?
