I recommend Las Cucarachas.  Instead of a bull, it's a giant, radioactive,
mutant cockroach!  It fires radiation blasts from its antennae (MIRV), sucks
up radiation like a sponge (ooo, the Doomsayers hate that), and is just as
hard to kill as you would imagine something based off a cockroach to be.

For the other PC's, instead of the Devil's Own Herd, you have the Devil's
Own Swarm.  Using swarm rules, individual attacks do nothing to them; only
area attacks have any effect.  Of course, once they're on top of you
(covering you and trying to crawl in your mouth, ears, nose... and other
orifices), that pretty much means dropping a grenade/Nuke at your feet.  And
there are more to take their place.  :)
