The only rules on cannibalism in deadlands state that you become a ghoul or
a wendigo after consuming human flesh. It depends where this happens.

If you eat a human in the Great Northwest, roll a d20 and add +1 for every
time you consumed human flesh. Add +2 when this occurs in winter. On a 20 or
more you become a wendigo. You become a white wendigo if it was a close
friend that you've eaten. Otherwise you become a black one.

If you eat a human in Kansas, then you might become a ghoul. Use the same
rules as with wendigos, but no +2 due to winter.

These rules come from "The quick and the dead", a sourcebook for deadlands,
the weird west. Well I wonder if one can eat his friend on any other place
savely......heh
