If memory serves me right, there's a few different ways you can handle
this.  You could, as D suggested, use Omega Man or have each Chef be a
represenative of a Horseman as Phil suggested, having Kaga's long life
written down to the ingestion of special ingredients.  You could also
say that Chairman Kaga is the grandson of the original Chairman Kaga,
and that the Iron Chefs are all new (the show has precedence for
rotation).  My original thought however, was modified and borrowed from
John Carpenter's Big Trouble in Little China (not Japanese of course,
but the idea is usuable).  Kaga (like Lo Pan) is undead - in this case,
harrowed -  yet is cursed to be driven by the desires he had in life (to
sample the ultimate in cuisines in Kaga's case). Perhaps he thinks that
there is some as yet unattained "ultimate dish" that can restore him to
life.  True or not, since he is undead, he can no longer truly
appreciate gastronomical delights (senses aren't quite what they used to
be), which has driven him quite insane.  His Iron Chefs are the
equivalents of Lo Pan's Storms, culinary skills centered around French,
Italian, Chinese and Japanese cuisines, yet each having their own
different enlightened martial arts styles, with perhaps some witch
abilities thrown into the mix as well.  That's about as far as I got
development-wise.
