This doesn't relate to what they'd eat, but rather, what they don't eat. 
From what I've known from people who work in chemical plants (OK, really
just you, Damon) is that they mostly make drugs.  Now, this chemical
plant would probably be near something, since the people who worked there
had to have come from somewhere.  They'd probably try to trade their drug
stockpiles, some of which is good to fight disease, some for recreational
uses (even "reputable" drug companies today sometimes get government
grants to make LSD, PCP and others).  But they've got to hide where
they're getting the stuff from, or else they might get raided.  Also, if
they got greedy, they might end up depriving a whole town or settlement
of the drugs they'd need to stave off a disease.  The "flying wendigos"
in Deadlands are created from people who hoard food while others starve
to death; what would happen to someone hoarding medicine?
