There's a good section on combat fromt he marshall's viewpoint in the Marshall's guide.
For the big cheeses, roll as normal.
For the mooks, cannon fodder, servants, etc. draw 1 (one) card, or rarely two for the very fast. I usually draw one for each group of 3-5 as appropriate to break them up a little. Yes, they get only one card. But they get to act as one and don't risk going bust on a quickness roll!
