Not very.  If they are dropped into the water, you will have to replace the bullets, then likely take the gun itself apart, clean and dry it, then reassemble.  A rusty gun tends to do the wrong thing at the wrong time.  

A heavy rain should be OK if the gun is kept out of the rain.  If the powder in the cartridges gets wet, they won't go off.  

As for mud--I'd take the gun apart and clean it at the end of the day--just to be sure.  Dropping a gun in the mud won't make it ineffective, but it should sure up the likelyhood of a mlafunction.  And for something with delicate moving parts like a Gattling, I'd just make sure I kept it dry.
