I've done it, but not for Deadlands (the principles are, I expect, the
same).
One story type you've left off: the foreshadowing story. Your idea that
only one story (or perhaps two) should be the evening's scenario is a good
one; otherwise players get distracted, or divide up, or Bad Things Happen
'Cuz They're Not There To Stop 'Em. But with just a smidge of planning, you
can insert a story in Week #1's Epitaph which makes early reference to Week
#2's game.
